Spiced Vanilla Granola
4 cups rolled oats
1 cup Sucanat/Rapadura (or brown sugar)
1/4 tsp salt
1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 cup freshly ground flax seeds
1 cup chopped pecans, walnuts, or almonds
1/4 cup shredded coconut (optional)
1/3 cup coconut oil
1/4 cup maple syrup
1 Tbsp vanilla extract
Preheat oven to 300 degrees. In large bowl, mix all dry ingredients. In saucepan, combine oil, choice of sugar and syrup. Bring to simmer over medium heat. Remove from heat and stir in vanilla. Pour over oat mixture, stirring well (with your hands if needed).
Spread onto cookie sheets. Bake; stir occasionally for about 30 minutes or until golden brown. Cool completely and store in air-tight container. This doesn’t need freezing or refrigeration. I usually make double batch for my family of 8 and it lasts for 2 weeks. Makes 8 cups. Our favorite toppings are vanilla yogurt and fresh fruit.
